Casareccia Pasta

Casareccia means ‘home style’ in Italian is typical of southern Italy. The narrow, twisted rolls were originally made by hand-wrapping the dough around a slim knife or wooden pin, and the resulting folds are perfect for holding onto sauce.

Casareccia works best with rustic, chunky sauces such as a meat ragù. Pasta maker Gianluigi Peduzzi sought to bring back the flavors of authentic pasta like those that his grandfather made.
